Los Congos Pacamara Washed - Green / Raw / Unroasted Coffee

Our award-winning Pacamara coffee was grown at our family farm - Finca Los Congos - located in the highest mountains of northern Nicaragua reaching upwards of 1,800 meter (6,000 feet).  We've been growing coffee for four generations since the early 1900s and we love what we do. Our coffee is 100% Arabica and specialty grade (less than 4% of all coffee in the world is specialty grade). We are proud to offer fully traceable and sustainably grown coffee, processed from a single origin farm and a single varietal micro-lot. 

Region: San Fernando, Nueva Segovia

Farm: Finca Los Congos

Elevation: 1,350 - 1,650 meters

Process: Hand-picked and sorted / Sun dried on raised beds

  • Washed - traditional process where we separate the seeds from the husk, ferment seeds overnight, wash them to remove the mucilate and then sun dry them.

Pacamara Flavor notes:  Fruity, milk chocolate with a juicy acidity, citric notes; very smooth cup with full flavor.

Roast Level: City - Full City (if you want the fruit, citric notes go lighter; if you want more chocolate go medium). This coffee is very versatile and a lot of fun to roast.  The Washed can go Full City +

Brew Method: we have brewed this coffee many ways.

  • For the lighter roast, we like to do a pour-over to taste those delicate citric notes.

  • For the medium to darker roast,: drip, French Press, Aeropress, espresso bring out the full flavor. We really enjoy the Washed Pacamara for Espresso.
