Our farms are located in Nueva Segovia, Nicaragua the highest elevation growing region in the country. This region is recognized for producing the best coffees in Nicaragua. Most of the Nicaragua Cup of Excellence winning farms are in this region. Nicaragua's rich volcanic soil and diverse micro-climates, provide the optimal ecosystem for growing specialty coffee.
- Quality - Although the majority of our team has many years of experience, we provide continuous training to ensure well-established processes are being implemented and a commitment to quality is instilled in every team member.
- Double Sorting - We carefully hand pick only the ripest fruit. The coffee cherry goes through a minimum of two stages of sorting before it is de-pulped. Each variety and grade is processed separately.
- Timely Process - Every farm has its own wet mill to ensure the freshly picked fruit is processed without delay. We meticulously control the de-pulping, fermenting, washing and drying.
The Paguagas have worked tirelessly at making their farms a model for the region. For the past ten years they have worked with an agronomist to analyze the farms' overall health and to define a rigorous plan to provide the best care and nutrition throughout the year. This effort has lead to the farms becoming some of the healthiest, most robust farms in the area.
